Sui Lieviti is the short name for Conegliano Valdobbiadene Prosecco Superiore Sui Lieviti DOCG Brut Nature. Aged on its lees like regular Prosecco, only more complex. Classy. Apples, limes, and stones, all crammed into the glass with excellent bubbles.
This is a crisp, vibrant, and fully dry Prosecco, with notes of fresh apples, lime, and stones. And honestly, stones sound pretty chic, right? Even if you can’t drink them, you can wear them! The Gregoletto family has been making their magic in the sculpted hills of terraced vines in the heart of Prosecco country for like, generations and they use this special traditional method called "sui lieviti" that is anything but sui generis. I think it means “we’re serious” in Italian, so most producers won't even touch this process because it's really difficult.*
The complexity will remind you more of the better Champagnes from Franc but without that crazy price tag they have to charge to pay all those skinny-assed French girl influencers they use. Me, I'm serving this at every dinner party because it's giving my guests luxury without the drama. They get enough of that in their lives already!
