Uncommon Earth is a label owned and made by Tomas Sinor, scion of the Mike Sinor organization, he of Ancient Peaks and Sinor-Lavallee fame, that place in Avila Beach where you can shuck your own oysters while tasting some of the best biodynamic wines on the central coast. Over the past several years, Tomas has worked for, or been a stagieire at a number of non-interventionist wineries around the world, most notably for the Parr Collective/Phelan Farm operation in Cambria, CA.

Let us discuss option #3. Palomino does well in high temperatures and yields large amounts of grapes, making it perfect for the climate of Rancho Cucamonga in Riverside County. Its biggest drawback is its flavor; it doesn't offer much. While this is good if you're producing fortified wines such as Sherry or Madeira, it's not so special on its own. That being said, winemakers are approaching the variety differently nowadays and are pulling a lot of flavor out. Fun to compare and contrast this with a Fino or Manzanilla Sherry. Have a nice piece fish, a spoonful of nuts, or anything with a little saltiness. This wine is around 10% alcohol, so bottoms up!
