Following their education at L’Ecole Oenologique de Mâcon in Burgundy, France, Stéphan founded Domaine de Courteillac in Bordeaux in 1982. Yet Stéphan sought more creative freedom than AOC regulations allowed—craving the ability to innovate in both viticulture and vinification. In 1998, the Asseo family left Bordeaux in search of a region where that vision could thrive. After exploring top wine regions from South Africa to Lebanon, Argentina to Napa, they found their home on the west side of Paso Robles. Captivated by its unique terroir, L’Aventure was born. Stéphan’s philosophy centers on a production-focused approach—crafting wines that reflect both vintage and place. Each cuvée is thoughtfully blended from the estate’s finest varietals to showcase authenticity, complexity, and balance. Family remains a core value. In 2013, their daughter Chloé joined the business and now oversees the entire operation. But the sense of family extends beyond the Asseos to include trusted partners like the Thiénot family and the dedicated team behind L’Aventure.
